Two Questions That Set the Specification
The two answers we need first are what gets spilled and what it gets cleaned with. Those decide the system more than square footage does, and they are the two questions a fast phone number never asks. Sugars behave differently from dairy, dairy behaves differently from a citrus line, and a caustic wash cycle changes the answer again.
Temperature is the third input. Hot washdown does not simply clean a floor, it thermally shocks it, and a coating that is chemically fine at ambient can craze under a cycle of hot water against a cool slab. That is why a room running a hot sanitation cycle gets specified differently from a cold room, even when the same product runs through both.
Most buildings we walk in this county end up with more than one specification. Wet processing takes urethane cement, dry storage and corridors alongside it often take a standard epoxy, and back-of-house rooms usually take a flake system that hides wear and cleans down easily. Cove Base, Seams, and the Inspection
For any food-handling room, the details that pass an inspection are the ones a cheap number leaves out. Coved base is the main one: the coating turns up the wall in a continuous radius so there is no square corner for water and product to collect in. A square junction between floor and wall is where residue sits, and it is the first thing an inspector looks at.
Seamlessness is the second. A properly built resin floor has no grout line and no joint for product to work into, which is exactly why it replaces tile in these rooms. The third is a slip rating appropriate to a wet floor with product on it, which is a real specification decision rather than a texture preference, because a floor safe when dry can be genuinely dangerous under a running line.
If an inspector has already given you a specific written comment, bring it to the walkthrough. We spec directly against what it says rather than guessing at a general standard, which is faster and considerably less expensive than building to a guess and correcting afterward.
Joints, Line Marking, and the Paperwork
Joints get treated as joints. A large slab expands and contracts, and coating straight over a control joint means a crack telegraphs through within a season. They get filled flexible and honored in the surface rather than buried, which is the difference between a floor that ages well and one that looks cracked in its second year. Line marking gets inlaid into the floor rather than painted on afterward. Inlaid walkway lines, bay divisions and safety markings outlast painted ones by years, which matters anywhere forklifts or pallet jacks cross them daily. Cracks are read honestly too: static ones get filled rigid and disappear, while cracks that are still moving mean the slab is shifting and no coating fixes that.
